Toasting the garlic in a dry pan first takes the raw bite out and gives the filling a nutty edge. Seal every wrapper tight: trapped air swells in the basket and splits the seam.
Toast the garlic in a small dry skillet over medium-low heat, stirring the whole time, for 1 to 2 minutes. Take it off the heat the moment it turns golden and smells nutty — it goes from gold to dark and bitter in seconds.
Beat the toasted garlic into the softened cream cheese until the filling is smooth and the garlic is evenly spread through it.
Keep the wrappers you aren't working with under a damp towel, or their edges dry out and won't seal. Spoon about 1 tablespoon of filling into the center of each — more than that and it leaks in the basket. Wet the edges with the water, fold into a triangle or a purse, and press the seams firmly, pushing out any air as you go.
Preheat the air fryer to 375°F for 3 minutes, then coat the basket with cooking spray.
Set the wontons in the basket in a single layer with space between them — work in two batches if they don't all fit — and spray their tops. Air fry at 375°F for 6 to 8 minutes, looking in at 6: thin wrappers go from golden to scorched quickly. They're done when golden brown and crisp all over.
Rest them 1 to 2 minutes before eating — the filling is far hotter than the wrapper. Serve warm, with the sweet and sour sauce for dipping.
